After pushing the desk down the hall, Ricki is easily able to climb on top of it and grab the torch. She is now fully (if flimsily) armed and ready for the rest of the dungeon… hopefully.

Sneak up on the rat and attack!
Distract the rat with the cheese and loot the corpse
Offer the rat the cheese to try and make friends!
Carefully set fire to the paper, then brandish BOTH torches at the dire rat to intimidate it
Hold on the paper. Sneak up on the rat and see if it seems hostile. If it does, then light the paper on fire and throw it at the rat. [either balled-up, or paper airplane, depending on level of paper skill]
If not, then carefully try and tame it by feeding it cheese.

Hide using the table and place the cheese on the ground in front of you. Once the rat goes to eat it, set the rat on fire.
Push the table up against the hole in the door, so Ricki can attack through the bars with the torch afterward. She’ll need the armour on that skelly to fight the smaller rats.
Make a charge for it and break down the obviously deteriorated jail cell door and use it to squash the rat, who seemingly is too fat to not be squished betwixt the bars!
We can kill the next hundred things we encounter in dungeons. *Make friends with this rat.*
It looks to me like the rat was able to bite through the iron bars, Ricki probably shouldn’t fight it in her malnourished state (see the -1 Def and -1 HP in Ricki’s abilities on her character page). The armor on the body looks too useful to not to try and get it, though.
I suggest Ricki to push the table closer to the iron bars and then distract the rat with moldy cheese.
Then on her way out qickly loot the body and block the hole in the door with the table to get some more time to escape to the ladder.

Hit and run: Hit the rat, then rush to mount the table, so that it has to climb to hit, and you can fend it off better.
Ricki should try and turn the table on its side to use as a makeshift (somewhat portable) barricade, and push it towards the rat to provide defense while attacking it.
Raid the corpse, will need lockpicks to get the sword upstairs. Use cheese to distract huge rat.
Read the papers, if you can read. Steal them if they’re useful or if you’re illiterate. Either way, use cheese to befriend the big rat!
